It’s getting colder…..Autumn has certainly settled in. By the time its lunch it’s great to be able to satisfy those cravings with something warming! Soup is always a popular choice as it can be very healthy, however boredom can soon set in, so although it may look an unusual choice give this walnut, kale and apple soup a try!

Serves 2
Ingredients
- 8 walnut halves, broken into pieces
- 200g kale, roughly chopped
- 1 onion, finely chopped
- 2 carrots, coarsely grated
- 2 red apples, unpeeled and finely chopped
- 1 tbsp cider vinegar
- 500ml low salt vegetable stock
Method
- In a non- stick pan cook the walnuts for 2-3 minutes until they are lightly toasted. Make sure you turn them frequently so they don’t burn. Take off then heat and cool.
- Add the onion, carrots, apples, vinegar and stock to a large saucepan and bring to the boil. Reduce the heat and simmer for 10 mins. Then stir occasionally.
- Once the onion and apple goes soft add the Kale and simmer for 2 minutes.
- Add to a blender and blitz until its a smooth consistency.
- Serve with the walnuts on top! Enjoy
