Last week we posted a winter warmer chicken casserole recipe. As it’s the slow cooker season, this week we want to share this amazing Sunday Lunch Slow Cooked Beef recipe.
On a brisk, cold winter weekend, nothing beats a Sunday lunch, but Sunday lunches can often get a bad press for being unhealthy but provided you cook everything healthily, then they can be a really healthy meal.
Sunday Slow Cooked Beef Recipe
To keep this Sunday lunch nice and healthy serve with steamed, minted new potatoes (add fresh mint leaves while you are steaming) and then serve with roasted or steamed veg – we love leeks, broccoli and green beans!
Ingredients
One beef joint
1/2 garlic clove – crushed
Olive oil
2 red onions – finely chopped
100g chestnut mushrooms – diced
1 litre good quality beef stock.
Method
Add a glug of olive oil to a pan, once heated add the onion and mushrooms. Cook until soft and onions.
Butterfly the been joint and rub the insides with olive oil and the crushed garlic
Add the mixture into the centre of the beef joint and tie up with string
Place in a slow cooker, add the beef stock (plus other veg if you wish)
Cook on a low to medium heat for 5-6 hours.
