Sometimes you just need a meal that is healthy, tasty, nutritious and fast. Give this prawn stir fry a try! As always you can bulk up and make extra portions for lunch.
Ingredients
Coconut oil
Onions
1 garlic clove sliced
Peppers
Mushrooms
Prawns (defrosted)
Soy sauce 2tsp
Method
Heat a wok until you can feel a good heat rising. Add a small amount of coconut oil and then a few seconds later add the garlic. Stir-fry until the garlic slices until they start to turn golden, then using a slotted spoon, spoon onto kitchen paper to drain.
Add a little coconut oil to the pan. Add the peppers and mushrooms and cook for 1 minute until softened. Take out of the wok and place on the side. Add the the prawns and cook until they brown. Add the soy sauce. Throw in the spinach and stir fry until the spinach wilts. Return everything to the pan, mix in and serve immediately.
