Ieuan’s Spicy Mexican Chilli

This spicy Mexican chilli is hugely tasty and surprisingly filling without overloading your plate with carbohydrate. It is a very easy dish to make and can be made into batches leaving you plenty to fill your week’s lunches and dinners. What’s better than a nice spicy chilli on a cold Winter’s night!
All you need is:
Lean Mince (Turkey or Beef)
Mixed Salad – Lettuce, Tomatoes, Cucumber, Peppers, Red Onion, White Onion
Tinned Chopped Tomatoes
Brown Rice (for higher carb option but not essential)
Various Spices to your Flavour – Cajun, Crushed Chillies
Tabasco Sauce
How To:
1) Set your rice boiling
2) Start chopping your salad
3) Start frying your mince until it starts to brown
4) Add the white onion to the mince until softened
5) Add and mix in your chopped tomatoes and spices until all cooked through
6) Layer your salad onto the plate
7) Once the rice is cooked mix in the tabasco sauce and any left over spices and layer on top of the salad
8) Spoon the mince onto the rice and salad
9)ENJOY!!
This spicy dish will certainly warm and fill you up on the cold evenings. Enjoy!
