30 Minute Spanish Chicken Recipe

No one wants to cook after a long day, so here is a recipe for Spanish style chicken which is easily made in 30 minutes!! And it’s super tasty!
Kcal 310, Protein 43g Carbs 17g, Fats 5g, Sat 1g
Ingredients
- 1 large onion, sliced
- 1 tsp olive oil
- 1 garlic clove, crushed
- 8 boneless skinless chicken thighs
- 2 Cox’s apples or russet apples, cored and cut into chunks
- 100g ready-to-eat dried prunes
- 150ml/¼ pint white wine (A miniature bottle is perfect…don’t drink the rest!)
- handful chopped parsley
Method
- Place a pan over a high heat and add the onion with the oil.
- Stir well and cook for 2 mins, then add garlic.
- Add the chicken to the pan and cook for a few minutes until each piece has browned a little.
- Add the chopped apples and the prunes, stir well, pour in the wine and bring to the boil.
- Simmer covered for 20 mins until the chicken is tender.
- Sprinkle over the parsley and serve with green vegetables
