I must admit sprouts never used to be my bag, when I think sprouts I have flashbacks of mushy smelly green lumps. However it doesn’t need to be the case, they are a highly nutritious vegetable that can be cooked easily, and make a delicious quick meal. Give this meal a try if you’re in a rush, it can be cooked and prepped in 25 minutes, maybe even 2o minutes if you’re good with a knife.
Ingredients For 2
- Salmon x 2 fillets
- Sprouts 2 heaped handfuls (or if you want to be precise 32 sprouts)
- Garlic: to your taste, i like alot, 4-6 cloves
- Oregano: 3 tablespoons
- Black Pepper: to taste
- Salt: small pinch
- Olive Oil: 5 tablespoons
- White wine vinegar: about 75ml
Process
- Heat the oven.
- Dice up sprouts into halves
- Dice up garlic, the smaller you can cut this the better.
- Add garlic, olive oil, Oregano, pepper, and salt to a small bowl and mix vigorously
- Add sprouts and 1/2 mixture to baking tin and roast in the oven for 10-15mins
- take out the sprouts and add salmon fillets on the top
- Add white wine vinegar to the rest of the mixture
- Pour the remaining mixture over the salmon and sprouts
- Place back in the oven
- Give it another 10 minutes in the oven
- Enjoy!
