This Sunday I tucked into a quick and easy breakfast. What you eat in a morning can really set up your day I have eggs most mornings. Here is a delicious recipe of scrambled eggs, grilled vegetables and kale.

Ingredients – per person

Eggs x 3

Milk

Any veg you fancy grilling (I used what is in the fridge!)

Kale

Method

1. Chop your veg and pop under the grill

2. Add 3 eggs to a bowl with a splash of milk, dash of herbs and a crack of black pepper and whisk up

3. Once the tomatoes and mushrooms start cooking through warm up a pan.

4. Add the egg to the pan and whisk vigorously until the egg becomes nice and fluffy and is fully cooked.

5. Add the egg to the plate and then pop the veggies on.
6. The kale can be eaten as it comes or you can grill it and add a little salt to serve.

Breakfast certainly doesn’t have to be tasteless or boring. This recipe can easily be used for a lunch or dinner option too!

The key with these recipes is to be open to being versatile if you don’t have an ingredient look for a healthy alternative you could easily add peppers, spinach, or even some meat. So get creative!
