Winter is here, but that doesn’t mean you need to consume vast quantities of heavy starchy food, instead make a meal like this prawn stir fry and use spices to keep your meals warming and satisfying. This simple prawn stir fry can be whipped up in 20 minutes perfect after a hard day in the office.
Serves 2 people.
Ingredients:
- Prawns: 2 palm fulls
- Cabbage Green : 4 large leaves
- Cabbage Red: 4 large leaves
- Bean-sprouts: palm full
- Carrots: 2 large
- Red onion: 1 whole
- Spring Onions: At discretion
- Bell Peppers: 2 whole
- Water-chestnuts: 75g
- Garlic: At discretion
- Lime: 1/2
Spices: (Once again, at discretion)
- Ginger
- Cayenne Pepper
- Chili Flakes
- Black pepper
Process
- Shred all vegetables, or if you’re old school, get the knife out and dice/tear
- Super heat a wok
- Add small amount of coconut oil, or high quality olive oil
- Combine prawns/ shredded onions and spices to the pan
- Stir fry, you have 2 minutes to throw in some dance moves as it cooks
- Throw in the veg
- Continue to stir
- Garnish the top with some coriander…. squeeze some lime all over
- Sit at the table and devour.
