I realise of course that my food blogs make it sound like I have a garden full of fruit and vegetables – which honestly isn’t true. The back garden has some remaining rhubarb and raspberries, dying courgettes in far too small pots and a chill plant sprouting the biggest chillis I’ve ever seen! In the front garden sits a lonely plum tree and seriously it has a ton of plums growing on it. I hadn’t noticed it at all until Sunday and could help but shout “Wow Look At My Plums!” – actually I probably said those plums, but “my” makes a better title for the blog!
So what am I going to do with all these plums I hear you cry! Probably give a load away to be honest…..but I am going to need some sustenance when I do the Yorkshire Lass 60 mile bike ride and that’s where the motivation came from for this plum flapjack recipe! I can’t claim that this is all my own recipe, but I have amalgamated several recipes. These plum flapjacks are gluten and sugar free and can be made suitable for vegans!
Ingredients:
- 200g Cooked Plums *see below
- 200g Gluten Free Oats
- 1 tbs Coconut Oil (melted/runny)
- 1tsp Ground Ginger
- 2tsp Honey or Agave Syrup (or another sugar substitute)
- 1 Cinnamon Stick
- 1 Vanilla Pod
*Cooking Your Plums (ooo er!)
Chop and de-stone the fruit. Add into a pan with the cinnamon stick, the vanilla pod split open and 2-3tbs water. Cook on medium heat with the lid on. Once the fruit is soft, remove the lid and let the liquid reduce – you want to end up with a fairly thick consistency.
For the Plum Flapjack Recipe:
- Preheat the oven to Gar Mark 5 or 190
- Grease and line a baking tray
- Mix the ingredients and spoon out onto the baking tray
- Pop in the oven for 20-25 minutes
