A few weeks ago I wrote a blog all about beans, comparing nutritional values of our favourite beans. Now, it seems only appropriate that I should give you a bean recipe to enjoy. And these creamy pesto butter beans is just the one to get your taste-buds going.
Ingredients:
Pesto:
- Garlic clove x 1
- Pine Nuts x 50g
- Fresh basil x 1 handful/25g
- Olive oil x 3 Tbs
- Juice of one lemon
- Salt and pepper
Salad:
- Butter beans x 1 400g can drained
- Spinach x 100 g
- Olive oil
- Juice of one lemon
- Pumpkin seeds x 1 handful
- Pomegranate seeds x 30g
Method:
- Make the pesto by first peeling garlic and then blending all the ingredients into a paste.
- In a pan, heat the oil and add the beans, spinach and pesto. Heat through for 2-3 minutes until the spinach has wilted and everything is warm.
- Remove from the pan and in a bowl add the squeezed lemon, pomegranate and pumpkin seeds and shake to mix.
- Serve as a single dish or as a delicious side.
This dish is super quick and easy and will no doubt be added to your “go-to” recipes when you are short on time. Healthy, delicious and comforting. And don’t forget it for your summer barbecues to wow your friends with.
