Oats are a marvellous food, and most people love them, but have you ever had them in an omelette. It sounds weird doesn’t it, but recently a personal training client made me a spiced oat and veg meal to try, it was amazing! This got me thinking what else can you do?
I came across this oats egg omelette recipe online, and WOW, its fantastic! It can be prepped the night before and cooked in 10 minutes, so makes a perfect breakfast. You’re looking at around 300-370 calories for this oats egg omelette recipe, so scale accordingly to meet your own goals. The eggs are a great source of protein, and the oats are an amazing source of slow release energy so this recipe is guaranteed to keep you feeling full unlike a bowl full of sugar aka breakfast cereal. Ingredients.
- 2 large eggs
- 3 large tbsp of oats
- 3 tbsp of milk
- Turmeric – large pinch
- Oregano or any herbs
- Chopped veg to include – 1/4 onion/ handful kale/ 1 red pepper/handful cherry tomatoes chopped.
- Small shaving of coconut oil
Process.
- Mix oats, milk, turmeric and herbs in a bowl, allow to soak for 3 mins (time to make your coffee)
- Mix in eggs and beat until frothy
- Pour mixture into a heated pan with coconut oil
- Spread veggies evenly across the omelette
- When the omelette firms up flip and cook until complete
- Serve hot with your coffee.
