My Day On A Plate – Preparing Your Lunch

A lot of people fall down with their nutrition due to lack  of planning and preparing their meals and the number one meal often forgotten about is lunch. After a long day at work you’re thinking about cooking dinner and sitting down to relax with the intention of getting up early and sorting lunch in the morning. However,  if you wake up late and are in a rush the idea of just grabbing something from the local cafe or supermarket for your lunch seems the best idea. But as you know, hunting for a lunch option that will meet your needs for a healthy lunch is fairly hard!

I’ve talked many times about preparing meals so here is one of the meals I cook on an evening ready for my lunch the next day.

Seasoned Spicy Roast Chicken with Roasted Vegetables

The great thing about this dish is its quick and easy and you can vary the vegetables and seasoning to prevent boredom. I used the following to make 3-4 portions:
4 Chicken Skinless Chicken Breast
Handful of tomatoes
4 sticks of celery finely chopped
1 onion
1 red pepper
1 yellow pepper
1 courgette
10 button mushrooms

  1. place the chicken in a pan and sprinkle with garlic and paprika, place in a pre heated oven for 25-30 minutes until the chicken is cooked through and juicy.
  2. Whilst the chicken is cooking, chop up and add all the veg to a roasting tin and place in the oven underneath the chicken.

This particular evening I was having sirloin steak, grilled mushrooms and salad. This is a quick and easy dish that didn’t need much preparation or cooking time, so I cooked my dinner along side my lunch.

Once my lunch was all cooked I left it on the side to cool and then distributed into tupperware and popped it in the fridge ready for the morning. Making a healthy lunch really is that simple!
