This Mediterranean Prawn recipe is a simple quick dish is perfect for making a large batch and preparing several meals for the week all in one go. It is a very tasty and filling mixture of fresh prawns, mixed vegetables, and rice and is super easy to prepare.
For this Mediterranean Prawn recipe all you need are the following ingredients:
- Fresh prawns or shrimp
- Tomatoes
- Onions
- Baby sweetcorn
- Brown rice
- Paprika
- Chilli powder
- Spinach
To make this recipe, I find it easier to cut and prepare all the vegetables first chopping them into the size you desire for your dish. Then set a pan of boiling water going and let your rice cook until soft. Whilst the rice is boiling you can start to fry off your prawns, either dry fry or use a light amount of coconut oil (just to cover the base of the pan). Once the prawns are cooked through you can add the vegetables into the same pan and just allow them to soften in with the prawns.
Once the rice is softened, drain it, and put it into a mixing bowl stir in paprika and chilli powder (season to your own tastes…I like it hot!). Once you have seasoned the rice add in the prawns and vegetable mix and give it a good stir to evenly spread the mix in with the rice.
You can also add some wilted spinach to this dish by simply steaming some spinach for a couple of minutes. You can make enough of this and tupperware it away ready for the week ahead of you.
