Lime And Coconut Balls

Here is a recipe for some rather tasty Lime and Coconut Balls, which can be enjoyed as a treat every now and again

Ingredients:

  • 1/2 cup cashew nuts
  • 1/2 cup almonds
  • zest and juice of 3 limes
  • 1 1/2 cups Medjool dates (or other dates), pitted
  • 1/2 cup unsweetened coconut

Method

It’s soooo easy to make these lime and coconut balls, simply add the cashew nuts and almond to a food processor and pulse until the nuts are finely chopped. Add all other ingredients excluding the coconut and pulse until the dates are finally chopped.

Add to a bowl and give a good mix to ensure the flavours are balanced throughout the mixture

Shape into small balls, roll in the coconut and refridgerate.
