Healthy Valentine’s Day Meal
Below is a Healthy Valentine’s Day Meal – A 3 course meal that’s perfect to treat the love of your life.
Avocado and Smoked Salmon

- 1 ripe avocados
- Half lemon, juice only
- 125g pack smoked salmon
- small handful tarragon, leaves only, chopped
- 2 tbsp crème fraîche
- Half tbsp caper, drained

- Peel and remove the stone from the avocado, cut into chunks and toss in half the lemon juice. Add the smoked salmon pieces to serving plates, then scatter with the avocado. Cover and chill for up to 1 hr until ready to serve.
- Mix together the tarragon, crème fraîche and remaining lemon juice. Drizzle over the salmon, scatter with the capers and serve straight away.

Cajun Lamb Steaks

- 1.5 tbsp cayenne pepper
- 1.5 slightly rounded tbsp paprika
- tsp ground cumin
- 1 rounded tsp garlic powder
- Half tbsp Maldon salt
- 2 lean lamb leg steaks
- Juice of half lemon
- 2 tbsp olive oil

- Measure all the ingredients into a jar, screw on the lid and shake everything together really well.
- Place 2 lean lamb leg steaks in the juice of the lemon and leave for 3-4 minutes. Sprinkle each side of the steaks with 1⁄2-1 tsp of the spice mix, rub it into the meat and marinate for 2-4 hours. If you’re pushed for time and can’t leave it this long the spice mix will still work but will be a little fiercer. To cook, smear the meat with olive oil and barbecue for 3-4 minutes on each side.

Roasted Spiced Apple and Blackberries

- 2 medium Bramley apples, each weighing about 200g/8oz
- 2 tbsp clear honey
- ½ tsp ground cinnamon
- finely grated zest and juice of 1 large orange
- 250g blackberries
|
- Preheat the oven to 180C/gas 4/fan 160C. Core the apples so you have a hole the size of a pound coin in each one. Make a cut just into the skin around the middle of each apple.
- Stand the apples in a shallow baking dish lare enough to take all four. Mix together the honey, cinnamon and orange zest, put an equal amount into the cavity of each apple, then pour the orange juice into the dish.
- Roast the apples for about 40 minutes, spooning the juices over them occasionally. Then, when the apples are almost ready, spoon the blackberries around and over the top of each apple. Return to the oven for 10 minutes or until the juices start to run. Spoon the blackberries and juices over the apples to serve.
