Day On A Plate… Healthy Steak Fajita Recipe

Hello all, I hope you’re enjoying the fine weather. It’s days like this that make me long for a nice cut of beef with a little spicy kick, topped of with some fresh juicy veg! For me there was only one dish that was going to tick the boxes…. Steak Fajitas! Here is a list of what you need for my healthy steak fajita recipe which serves 2 people:

Ingredients:

  • 300g cut of steak (go to town on the cut) (cut into tiny strips)
  • 1 medium onion (sliced)
  • 2 medium garlic cloves (sliced)
  • 2 bell peppers (sliced)
  • 1 large Jalapeno pepper (sliced)
  • 1/2 medium avocado
  • 2 table spoons olive oil
  • Sprinkle of cilantro (get your chef on)
  • Secret spice blend (1tsp chilli powder, 1tsp cumin, 1tsp cayenne pepper, 1/2 tsp black pepper, 1 tsp paprika)
  • Leafy greens (you need the whole leaf) lettuce or cabbage work well

To The Kitchen!

  1. Heat up large pan, in goes the oil (do not allow the oil to smoke)
  2. When hot add onions and garlic, give it a mix until it looks a little brown (2-4min)
  3. Next add in the steak strips and Jalapeno pepper, throw in the secret spice blend ( 4-6 min)
  4. MIX MIX MIX
  5. In go the bell peppers (4mins)
  6. Scoop out small chunks of avocado and place inside leafs
  7. Insert the mix and fold
  8. Enjoy!

This is a great low carbohydrate, light tea that’s packed with essential fats, good proteins and a great list of micronutrients. The mix stores relatively well…. just don’t put it into the leaf until your ready to eat… it will go horribly soggy.
