Day On A Plate – Omlette And A Healthy Pie Recipe

When I woke up this morning I had some spinach and chicken left over from last night’s tea and then it was on train my clients. After my personal training sessions I had a training session which was followed by an omelette. I really love omelettes but I have to say my omelettes taste good but often look more like scrambled egg! Today I chose peppers, mushrooms and roasted tomatoes it was yummy and a fantastic brunch!
I’ve got a few busy days coming up so this evening I wanted to make a quick and easy dinner that I could bulk make so I made a cottage pie with sweet potato mash. So here is my healthy pie recipe
Ingredients- Serves 4
- 500g super lean mince (bought from the butchers)
- 1 large onion
- 1 red pepper
- 1 yellow pepper
- 3 stems celery
- 1 low salt stock cube
- frozen vegetables
- 5 large sweet potatoes
- garlic
- crack of black pepper
Method
Set the oven to 180 degrees.
peel your sweet potatoes and add to boiling water.
Add the mince to a pan with a little oil and begin to cook the mince until it goes golden brown, then add the onion, peppers and celery to the pan and continue to cook.
Meanwhile make the stock up and add to the pan. Add the frozen veg to the pan and leave to simmer.
When the potato is cooked mash the potato (you do not need to add anything to the mash)
Add the mince to a tray and lay the potato over the top and cook in the oven until slightly golden (about 10 mins)
Mmmmm, a healthy pie recipe you can all enjoy without feeling guilty!
