The words curry and healthy are often not two words you would associate together, but just because you might be watching your waistline doesn’t mean that you have to only eat salads. Here is a tasty, healthy curry recipe for you to enjoy.
You can substitute the chicken for turkey if you prefer and if you’re a vegetarian then replace the chicken with some chickpeas instead.
Serve with some cauliflower rice for a low carb side and enjoy!
Healthy Curry Recipe
Chicken, Spinach and Mushroom Curry – Serves 2
Ingredients:
1 x small onion, chopped
1 x clove garlic, crushed
1/2 green pepper, diced
2 x chicken breasts, diced
Handful of mushrooms, sliced
1 x 400g tin of chopped tomatoes
½ bag spinach
½ tsp each of curry powder, cayenne pepper, paprika, garam masala and cumin (adjust to taste) or if you like just use a larger volume of curry powder.
Method:
1. Place a small amount of coconut oil in a pan and cook the onion, green pepper and garlic until the onion becomes soft.
2. Place the spices in a pan and cook until the release a nice aroma (if the pan becomes dry add a small amount of water). If you worried about cooking with different spices and getting a good flavour, then just use curry powder instead.
3. Add the chicken and cook thoroughly (if you’re a vegi but cooking this dish for meat eaters cook the chicken in a separate pan and add at the end).
4. Once the chicken is cooked, add the chopped tomatoes.
5. Add the mushrooms and spinach and simmer until the mushrooms are soft and the spinach has wilted. The longer you leave the dish to simmer the longer the spices will absorb and enhance the flavour of the dish.
