Just because it’s Summer doesn’t mean the slow cooker has to get banished to the back of the cupboard. We don’t have to preach that slow cookers are ace for helping you with your food prep and keeping that healthy diet on track so I wanted to share the recent Harissa Chicken & Butter Bean recipe I’ve been making.
Ingredients
Makes 2-3 portions.
- 6 x Chicken thighs or 2-3 x fillets (diced) – whichever takes your fancy
- 1 x tin of chopped tomatoes
- 1/2 punnet of cherry tomatoes, halved
- 1tsp of harissa paste
- 1 tsp of paprika
- 1 clove garlic, crushed
- 1 x tin of butter beans (drained)
- Handful of mushrooms , sliced
- 1 x small onion, diced
- Any other veg you might like to add, I think spinach and green peppers goes really nice with this.
- Handful black olives
- 200ml water.
How To
Not sure this needs any explanation….
- Chuck it all in the slow cooker
- Turn it on to a low heat
- Simmer for around 4-6 hours, or longer.
This Harrisa Chicken and Butter Bean recipe makes for a great lunch, or a nice evening meal. Serve with some brown rice or bulgar wheat and a portion of broccoli for a delicious meal.
