Egg and spinach stuffed peppers
Today I was in the mood for eggs for breakfast. I looked in fridge and saw some halves of some peppers which I had used the night before, so thought I would use these. I quickly wilted some spinach under hot water, added it to the bottom of the pepper  and then cracked the eggs on top. I added a little seasoning and baked them in the oven until the egg was cooked.

The pepper was a little crunchy which worked well with the runny egg. It was easy to make, tasted great and could be easily packed up and taken to work with you. I’ll certainly be making the egg and spinach stuffed peppers again!
