So my morning started a little ropey last Friday as I was woken up 15 minutes before my alarm to the sound of an almighty thud on my bedroom window. I looked out the window to see a pigeon sat looking dazed on the window ledge after obviously flying into the window!
So, I was up but not quite awake as I wondered down stairs to make breakfast. The night before I had roasted some chicken and made a salad for my lunch so that was ready to go!
That morning after I had been rudely awakened I had poached eggs, with spinach and smoked salmon. It’s quick and easy breakfast high in protein and those important good fats. It takes me about 8 minutes in total! I do try and buy my smoked salmon from the market when I can but shop bought smoked salmon is still yummy! For me its crucial that a poached egg is cooked to perfection so that you can pop it and the yolk runs freely and the egg white is nice and thick!.
A lot of people say that poaching an egg is too hard so here are my top tips for poaching an egg:
My top tips for the perfect poached egg
- Boil water in a pan so its about 2.5 inches deep
- Bring the water to the boil and then pull of the heat
- Crack the egg into a ladle and gently lower into the water
- The water doest want to be bubbling as you are poaching the egg not boiling
- Use a spatular one the egg start cooking to stop it sticking to the pan
once the egg white has turned white about 2 mins lift the egg out of the water carefully with a spatular
Cook the spinach in some boiling water for 1 minute add the the plate with the smoked salmon.
I found myself checking on the blooming pigeon 4 times that morning and ended up running out and forgetting my lunch! I find forgetting my lunch rather frustrating however it’s not the end of the world but I do find it frustrating that a lot of places don’t always have a healthy option on their menu. However, it doesn’t mean you can’t get something healthy as long as you’re not afraid to ask to swap and change things to make it healthier more often than not most places will be happy to help.
We are fortunate at motive8 North to have the Northern Monk next door to our Marshall Court studio. At the Northen Monk is the Grub and Grog Shop preparing healthy breakfast, lunches and dinners so we have all bases covered. Their food is not only incredibly tasty but healthy and sourced from local farms. So after forgetting my lunch I opted for the trout dish which is a very good size piece of fish with chilli and fresh seasonal greens it was yummy, very well priced and a great alternative to my left at home lunch.
