This weekend I was back home with my family and that means eating together. My mum has always loved getting us together and cooking. From a very early age I can remember puling up a kitchen chair to the worktop and helping her prepare dinner, nowadays its often a group effort to get food prepared and cooked to feed us all.
On Sunday my parents went to their spin class and I prepared a Asparagus, Feta & Pea Frittata With Roast Tomatoes for when they arrived back these are great because you can eat them warm or cold which worked out ideal as my dad never likes to eat until he is showered but we couldn’t wait! Sunday turned out to be a really lovely hot day so we opted to have a BBQ my little cousins came round and we had great fun preparing kebab skewers for the BBQ, this is a great way to get young children interested in trying different vegetables.
Try these options:
Meat
Chicken ( seasoned with garlic and mixed herbs
King Prawns (rubbed with garlic and chilli
Steak (seasoned with pepper and garlic)
Veggies
Mushrooms
Onions
peppers
Aubergine
Tomatoes
Avocado (this was a suggestion from one of the little ones but actually tasted nice with the chicken)
Once the children had made up the skewers and they had been on the BBQ it was ridiculous how keen they were to try them!
We also baked some sweet potatoes on the BBQ and and them served them with lime squeezed over the top and they were really yummy!!!
