Day On A Plate – Lazy Sundays & Hectic Mondays

So my Sunday certainly would not have won any prizes for the most exciting day however i did mange to sand and put the first layer of paint on my back door and paint my kitchen and dining room skirting boards something I have been trying to get round to doing for about 5 months!
However when it got to dinner I was looking for a quick option that involved minimal preparation.

As it was sunny we decided to get a BBQ going and have a simple steak with roasted veggies.

For me the seasoning and cooking of steak is extremely important. For this steak I massaged a crack of black pepper into the meat and then finely crushed some garlic and a little paprika on to both sides and left for 10 minutes to marinade.

For the roasted veg I made a tinfoil tray and added onions, vine tomatoes, sliced pepper and some mushrooms. I then sprinkled with mixed herbs. Yum!

The steak didn’t take long to cook (it depends on how you like you steak cooked) and I cooked the roasted veggies on for about 15 minutes. I must say the tomatoes were scrummy!

On monday for some reason I was pretty slow to get into gear so after my shower I found myself a little behind schedule so here is my simple but quick breakfast.

I had some left over cooked steak from the BBQ so I gave that a couple of minute in the pan to warm through. I cracked 3 eggs into a pan and added a splash of milk and a twist of pepper. I then scrambled the egg and added a few tomatoes.

All in all it took me about 5 minutes to cook. Many of you are probably thinking ‘Eurgh steak for breakfast’ however having a high protein meal for breakfast really sets you up for the day! Give it a go!
