Day On A Plate – Avocado Baked Eggs

Eggs and avocados are amazing for protein and good fats and they can be enjoyed in some great combinations. Avocado baked eggs are amazing and easy to make, all you need is:
1 avocado
2 eggs (free range of course)
spring onion
pinch of black pepper
Method
These are super quick so great for breakfast, added to a meal or as a snack!
Pre-heat the oven to 180 degrees. Whilst the oven is warming up slice the avocado in half and remove the seed.
So this next bit is crucial as you want the perfect baked avocado egg. If the hole left from the pip is too small and the egg is too big the egg will run out so you may need to scoop a little extra avocado out (you can just eat this!)
Place the avocado skin down in a oven dish or tray and then slowly crack the egg into the hole. Repeat with both eggs.
Gently place the tray in the over being careful not to spill any egg!
Bake for about 7 minutes or until the egg is cooked
Chop a little spring onion and add to the egg to serve with a pinch of pepper!
Eat with a spoon and enjoy.
