Anyone who knows me well will agree that I do not function well when I’m HANGRY, so here is an example of one of my days on a plate to show you what I eat!
Having a family who own an egg farm is fantastic as it means fresh free range eggs that taste incredible. More often than not my day will start with eggs in one form or another and today it was scrambled eggs.
A lot of people argue that they don’t have enough time in a morning to make breakfast but my answer to that is get up earlier, or make a batch of our egg muffins and have these in the morning . Get up 15 minutes early and make this delicious recipe.
Scrambled Egg with Kale, Mushrooms and Tomatoes
This is a quick and recipe….and really tasty!
- Chop 5 tomatoes in two
- Dice 3 large mushrooms
- Gently cook (if you have a good enough pan you don’t even need oil)
- Add finely chopped kale and sprinkle with garlic power and a twist of pepper
- Whilst that is cooking, crack 3 free range eggs into a jug and add a glug of milk. Add a little pepper and whisk
- Tip the veggies on a plate and keep warm as you scramble the eggs…..remember to keep stirring until the eggs become fluffy!
- Serve up!
- Only 1 pan a knife and a chopping board to wash up! winner!
TOP TIP- use leftover roasted veggies from last nights meal or whilst you cook your diner cook this to speed everything up!
Feta Cheese Salad
Sorry no pic guys I ate it before I could take a pic! shows it was yummy though!
Salad certainly doesn’t have to be boring! In mine I had:
- grated carrot
- cucumber
- lettuce
- beetroot
- red peppers
- yellow pepper
- tomatoes
- feta cheese
It is unusual for me to not have meat for my lunch but was a nice change!
Simple Steak and Veg with Spicy Mushroom!
I often hear that healthy food is boring and tasteless however if doesn’t have to be!
So here is my dinner steak and veg and how I make this taste so good! It’s all in the seasoning folks!
This is just a basic 28 day matured steak however with a little pepper and garlic rubbed in and left for 5 minutes it really makes a difference and to give the mushroom a different flavour I sprinkled it with some paprika
- Add the broccoli and carrots to boiling water or place in a steamer.
- Cut any fat off the steak ad rub a little pepper, oil and garlic into both sides of the meat
- Turn on and heat up a ‘George Foreman’ style grilling machine or any other grill
- Sprinkle paprika onto the large mushroom
- Place the mushroom on the grill with the steak and cook to your liking, I cooked mine 45 seconds each side
- Serve up and enjoy!
All these meals are pretty much non-fuss and left me feeling full!
