Chunky Bolognese with Courgetti

I like to mix up my meals week on week and add bit of variety but from a child my staple meal for a quick and easy meal has got to be bolognese. My mum taught me to cook this as a child and I could cook it for my family from the age of 10! It is made completely from scratch and includes loads of fresh veggies and the simple thing about this is you can use anything you have in the fridge or even frozen veggies. I then serve it with courgetti.

For my chunky bolognese I use the following
Lean Grass Fed Mince – I buy mine from the butchers as I know exactly where is has come from and its lean. You certainly don’t want to be using mince that gives off a load of fat!
Onions
Peppers
Mushrooms
Celery
Peas

I cut these thick to allow it to be a bit more chunky and crunchy!

You simply cook the mince through and then add the veggies!

I never use jars or tinned sauce so for the sauce I often use tinned tomatoes (check the salt and sugar content), however this time I had loads of tomatoes left over so I gave these a little blitz so they were still chunky and used these for the sauce. To add flavour to the sauce I added 2 cloves of garlic, mixed herbs and some black pepper to taste.

That is really all you have to do! Leave cooking  until the veggies are cooked to your liking. It then can be eaten there and then or left to simmer to add more flavouring.

One thing I do recommend is bulk making for lunch the net day or pop in the freezer.

To serve with it I simple got a courgette and peeled it using a peeler (no need for a spiralizer). Courgetti it is a healthy alternative to pasta and has a great crunch factor.
