Chris’s Chunky Baked Eggs

You may find yourself with a lazy morning one weekend. If you’ve got 30 minutes free try this simple spicy brunch recipe of chunky baked eggs. You can keep these pretty well for a couple of days which is great if you don’t have a lot of time on the mornings and fancy a pre made spicy breakfast one morning.

All you need is:

  • 1/2 courgette
  • 1/2 onion
  • 1 pepper
  • 1 tin chopped tomatoes
  • 2 hand fulls kale
  • 2 large eggs
  • Chilli lakes
  • 2 garlic gloves

Instructions

  • Step 1 – Lightly fry onions in the coconut oil
  • Step 2 – Whack in the garlic after the onions have gone soft (not brown)

  • Step 3 – get spicy add the chilli flakes
  • Step 4 – add in chopped tomatoes
  • Step 4 – add in all of the veg you desire, peppers, kale, and courgettes always work well for me

  • Step 5 – let it simmer
  • Step 6 – crack the eggs on top and throw it in the oven
  • Step 7 – prep morning coffee and arm yourself with a knife and fork and enjoy!
