This is the season of slow cookers, god bless whoever invented slow cookers and how easy they make our lives. This morning I left the house with this chicken dish slowly cooking, ready for tonight’s tea. I don’t even know why I’m getting excited….it’s not even for me (I’m a veggie!) but I do like the idea of having one of our evening meals already prepped for tonight, and to be honest I used the base of the following Chicken, Butter Bean, Spinach & Mushroom One Pot Recipe to make a separate veggie-friendly portion for me in a pan.
So, without further-ado here is how to make this Chicken, Butter Bean, Spinach & Mushroom One Pot Recipe.
Ingredients – Serves 2
- 180g chicken thighs
- 400g chopped tomatoes
- 200g fresh spinach (you can use frozen if you like)
- 1 onion thinly sliced
- 200g butter beans (drained)
- 200g sliced mushrooms
- tbsp dried mixed herbs
- tsp paprika
- tsp chilli flakes
How To
- Oh how I love the simplicity of this…
- Bung it all in the slow cooker and heat on a low heat for around 8 hours
- Simple….
You can substitute the vegetables for any others which take your fancy, and of course you can make larger quantities if you wish.
I would serve this dish with some nice green vegetables such as broccoli and green beans, and if you need some additional carbohydrates then bulgar wheat would be a good side dish to serve with it.
I don’t know about you, but I love the homely smell of a dish cooking in the slow cooker, and on those days when you’re home from work late or really can’t be bothered to cook anything healthy they are a godsend (and stop you ordering a take away!)
