Chicken Omlette – High Protein Breakfast

Having a high protein breakfast is a great way to kickstart the day as it keeps your energy levels constant instead of experiencing the blood sugar roller coaster you get after munching on some breakfast cereals. You’ll also more likely to feel fuller for longer and less likely to choose unhealthy snacks.
This chicken omelette is high in protein and a fantastic start to your day. As you know preparing food in advance not only saves times but ensures you are eating the right stuff. The omelette should only take 10 minutes and if you pre-bake the chicken and mushrooms the night before it will save you some precious minutes in the morning.
Ingredients (per person)
- 1 x chicken breast (pre cooked)
- handful chopped mushrooms
- 1 x onion, chopped
- 2 eggs beaten
- salt and pepper to season
Remember you can add other favourite veggies too!
Method
- Cook the onion and mushroom until soft.
- Whisk the eggs and add the seasoning.
- Add the onions, mushrooms and sliced chicken to the egg mixture.
- Pour into a pan on a medium low heat. When the egg begins to set and cook on the underside, flip and then cook the other side.
A great high protein breakfast which is simple to make. Enjoy!
