You may notice that here at motive8 we are massive fans of cauliflower! We’re not talking high-fat cauliflower cheese, or boiled to an inch of it’s life cauliflower, but healthy recipes such as cauliflower rice, Kate’s spicy cauliflower bites snack recipe, and I am currently in love with this cauliflower curry and poached eggs recipe. It’s a recipe I like to add on my personal training client’s nutritional plans as it’s so easy to make. The original recipe is actually Aloo Gobi with poached eggs, but I replace the potatoes with butter beans and also add some spinach and mushrooms. An evening meal is not an evening meal without mushrooms for me.
Anyway, enough waffle, how do you make this scrumptious cauliflower curry and poached eggs recipe? Well, here’s how….it takes about 20 minutes to make so absolutely no excuses for not having time. Bulk make some for tomorrow’s evening meal or lunch. Make the poached eggs runny, so the egg yolk runs over the curry when you cut into it. My mouth is watering as I write this…..
Ingredients – Serves 2
- 2 eggs per person – I bet this dish goes nice with chicken too, but I’m a vegi so haven’t tried this.
- 1/2 cauliflower head, cut into florets
- 1 x tin butter beans
- 100g mushrooms, sliced
- 1/2 large onion, diced
- couple of handfuls of fresh spinach
- 1/4 tsp of chilli powder
- 1/2 tsp of tumeric
- 1 tsp mustard seeds
- 1 garlic clove, chopped
- 1tsp fresh, grated ginger
- 1 green chilli, finely chopped.
How To….
- Steam the cauliflower florets, until cooked but still a bit firm
- Heat a small amount of oil in a non-stick pan
- Add the onion and cook for 5 minutes
- Add the mushrooms and cook for another 5 minutes
- Add the garlic, ginger and chilli and cook for 2-3 minutes
- Then add the spices and mustard seeds, cook until the mustard seeds start to pop.
- Add the butter beans, cauliflower and spinach to the pan and then simmer on a low heat for 10-15 minutes, ensuring the vegetables and butter beans are all coated with the spices.
- Whilst the curry is simmering, poach two eggs per person trying to perfect a runny yolk!
- Place the curry on a plate, place the poached eggs on top.
- Enjoy!
