Last week I had a go at making a carb free lasagne. Those who know me will know I’m not one for measuring or following a recipe….I just chuck things in a pan or pot and hope for the best. If they don’t taste too good then I either change the recipe or don’t make it again! Simple!
This is pretty easy to make, I’m a vegi so I made mine with just vegetables (surprise!) however, for this version I’m going to add in some lean mince or turkey mince….just so all you carnivores out there don’t miss out! For the vegetarians out there I would just make the sauce minus the mince, so cook all the veggies down then simmer in the chopped tomatoes until you are happy with the flavour.
For the lasagne sheets, we are using butternut squash slices, however you can use layers of aubergine, courgette or even leaks.
Ingredients
- Lean mince or turkey mince – allow 125g per portion
- 1/2 x aubergines cut into slices
- 1 x courgettes cut into thick chunks
- 1 x red pepper cut into slices
- Handful of mushrooms cut into slices
- 1 small red onion, finely chopped
- 1 x 400g chopped tomatoes
- 1 x garlic clove (crushed)
- 1 x tbsp. mixed herbs or handful of fresh basil, chopped
- Butternut squash cut length ways into 0.5cm thick slices (you can pre-buy these if needed)
- 1 x large egg
- 200g quark
How To
1. Pre-heat the oven to 180 degrees.
2. Put a small amount of oil in a pan, add the garlic and onions and cook until soft.
3. Add aubergines and courgettes and cook for 6-8 minutes. If you are using mince, then add here and cook thoroughly.
4. Add the remaining vegetables excluding the butternut squash slices.
5. Add the chopped tomatoes, herbs and cook down. You don’t want the sauce to be too runny, so try to cook down so it’s thick.
6. On the bottom of an oven dish, layer the butternut squash slices.
7. Add a layer of the sauce/meat mixture
8. Add another layer of butternut squash slices. Keep repeating the layers until you are at the top of the oven dish.
9. To make the topping whisk one egg and the quark. Add this to the top of the lasagne.
10. Cook until the butternut squash sheets are thoroughly cooked and the dish is heated through.
Serve with some healthy greens, and hey presto! We hope you enjoy this carb free lasagne!
