Most people know I LOVE eggs, as a vegetarian they are a great source of protein, especially post workout, and I will pretty much eat them with anything! I made this amazing breakfast baked eggs recipe at the weekend, it’s super easy….perfect for a lazy Sunday morning breakfast or brunch.
Ingredients
Per person:
2 x eggs
Handful of cherry tomatoes
Handful of spinach
Fresh or frozen basil
1/2 avocado
2 handfuls of button mushrooms
How To…
Pre-heat the oven, as hot as it will go!
Put a drizzle of olive oil in a ramekin, and lightly grease.
Place spinach leaves in the bottom of the ramekin.
Chop the cherry tomatoes in half, and then cover the spinach leaves.
Add basil….as much as you like, I love basil so loads for me!
Crack an egg on the top, then place in the oven and bake for 8-10 mins.
The egg white should be cooked, but the yolk slightly runny.
Whilst cooking the eggs, cook your mushrooms.
Serve on a plate with chopped up avocado and some chilli flakes if you’re feeling daring!
