Personally I’ve always found breakfast to be the trickiest meal of the day. I’ve got limited time. I’m usually in a rush and I’m often up so early for work that my hand-eye co-ordination isn’t exactly at Masterchef levels. On top of all that, I’m looking to get a healthy, protein-rich meal in without just resorting to a lazy bowl of cereal or a slice of toast. Here’s a sneaky little recipe I’ve found that’s super easy to make and pretty tasty too. I’m calling them Alex’s Breakfast Burritos!
Ingredients:
2 Tortillas
6 Eggs
1 Dash of Milk
2 Handfuls Spinach
2 Tablespoons Salsa (I prefer the spicy version!)
Pinch of Salt and pepper
Method:
- Mix your eggs and milk in a jug, then add your salt and pepper to taste.
- Add your egg mixture to a pan and heat gently for 3-5 minutes, stirring frequently so it doesn’t burn or stick to the bottom.
- When your scrambled eggs are nearly done pop your tortillas in the microwave and heat for about 10-20 seconds (yes you could theoretically make your own tortillas and oven cook them, but I’m guessing you don’t have hours to spend cooking every morning).
- Add your scrambled eggs to your tortillas, along with the salsa and spinach.
- Wrap them up and enjoy.
And there you go! A quick and tasty high protein breakfast recipe that you can cook and serve in less than 7 minutes. Pro-tip from my own experience, don’t get too distracted by the TV and end up wasting all the time you saved with the quick recipe!
