20 Minute Recipe – Tomato and Harissa Chicken

After a long day at work nobody wants to be slaving away in the kitchen for hours so here is a quick and easy 20 minute recipe, Tomato and Harissa Chicken with a hint of spice. Remember to make in bulk for lunches and evening meals when you don’t have a lot of time to spare!

Ingredients

4 skinless chicken breasts

2 tsp harissa

1 tsp olive oil

1 tsp  oregano dried

250g pack cherry tomatoes

1 handful of olives

Method

Heat the oven to 200C/fan 180C/gas 6.

Put the chicken into  a roasting tray, rub with the harissa, oil and oregano.

Place in the oven covered with foil and roast for 5 mins, then remove the foil and add the olives and tomatoes.

Roast for 10 mins more until the tomato skins start to split and the chicken is cooked through.
