Friday is more often than not in my house steak night! It’s normally beef steak but every now and again I love to mix it up and lamb is often a good choice. Although I love to cook and use recipes that work well together, I’m also more often than not just chucking stuff together and that often depends on what needs using up in the fridge. However, I find, these meals can often taste the best!
For this Lamb Steaks with Veggies meal I used the following
Lamb Steaks
Cherry Tomatoes
Peas
Spinach
Onion
Corn on the cob
Method
Season the steaks with pepper, garlic and mixed herbs, cook on a George Foreman or grill for 5-6 mins each side or until cooked to your liking.
Place the corn on the cob in boiling water and cook, adding the peas and spinach 5 minutes before the end.
When the steaks are ready pop them to rest for a few mins whilst your grill the onion and tomatoes.
Once its all cooked pop on the plate and enjoy! Remember you can always make extra for your lunch the next day.
