Healthy eating does not have be complex and take a lot of time or money! This salmon and eggs dish is a favourite of mine and is very tasty. It is perfect for a simple lunch or evening meal.

The ingredients are as follows:

  • salmon fillet – 1 per person
  • mixed leaf salad, tomatoes,  – as desired
  • small new potatoes – 3-4 per person
  • eggs – 1-2 per person

This dish is very easy to make all you need to do is the following:

  1. Par-boil the potatoes and leave them to soften
  2. Place the salmon in tin foil and season with mixed herbs, pinch of seasalt, and lemon
  3. Wrap the salmon and place in the oven (180-200 dependent upon oven) for 20-30 mins but keep checking
  4. Prepare the salad on the plate
  5. Once potatoes have softened drizzle with olive oil and sprinkle mixed herbs over them and place in the oven until they start to brown
  6. Once potatoes and fish are nearing done boil a frying pan full of water and add a couple of splashes of vinegar
  7. Once boiling, crack the eggs into the pan until cooked
  8. Plate up and enjoy!

This recipe is very easy and to make it lower carbohydrate remove the potatoes or replace with more vegetables or quinoa. Also bear in mind that my goals may differ from yours hence my photo having slightly more potatoes. Enjoy!
