Chris’s Chunky Baked Eggs

You may find yourself with a lazy morning one weekend. If you’ve got 30 minutes free try this simple spicy brunch recipe of chunky baked eggs. You can keep these pretty well for a couple of days which is great if you don’t have a lot of time on the mornings and fancy a pre made spicy breakfast one morning.
All you need is:
- 1/2 courgette
- 1/2 onion
- 1 pepper
- 1 tin chopped tomatoes
- 2 hand fulls kale
- 2 large eggs
- Chilli lakes
- 2 garlic gloves
Instructions
- Step 1 – Lightly fry onions in the coconut oil
- Step 2 – Whack in the garlic after the onions have gone soft (not brown)
- Step 3 – get spicy add the chilli flakes
- Step 4 – add in chopped tomatoes
- Step 4 – add in all of the veg you desire, peppers, kale, and courgettes always work well for me
- Step 5 – let it simmer
- Step 6 – crack the eggs on top and throw it in the oven
- Step 7 – prep morning coffee and arm yourself with a knife and fork and enjoy!
