With December fast approaching the Christmas parties will soon be in full swing! If you are hosting a party this festive season here are some healthy Christmas nibbles to keep the party flowing but your diet under control.

Spinach Thai Bites

Kcal 36 Carbs 2g Protein 2g Fat 2g Sat 0

Ingredients

  • 2 segmented and chopped limes
  • 2cm piece of ginger finely chopped
  • 1 shallot sliced
  • half chilli chopped
  • 1 tbsp coriander leaves
  • 2 tbsp nuts chopped
  • 12 large spinach leaves

Method

  1. Add the lime, shallots, ginger, chilli, coriander and nuts to a bowl and mix together.
  2. Lay the spinach leaves out and place a spoonful of filling into each one.
  3. Wrap the spinach leaf around the mixture if the leaf is big enough, if not serve with the mixture placed on the leaves.

Guacamole Dip

  • 2 ripe avocados
  • juice of 1 lemon
  • 1 red chilli, deseeded and finely chopped
  • small bunch of coriander finely chopped
  • small red onion, finely chopped
  • 1 tbsp organic olive oil
  1. Peel and mush up the avocado but make sure it still has some firmness and texture.
  2. Add all the ingredients to the bowl and stir in.
    Serve soon after making.
Kale Chips
Ingredients
Bag of kale or cavolo Nero
Sal and pepper
Paprika
Tbsp olive oil
Method
1. Wash the kale or cavolo nero and remove any wood stems. Dry and chop into large pieces
2. Toss the leaves in the olive oil, pepper, salt and paprika
3. Place on a baking tray and bake in the oven, 180-200 degrees, until crisp. Keep an eye on the crisps as they easily burn!
Healthy Turkey Kebabs
These snacks can be made with any vet, for the full on Christmas  feel try sprouts and carrots instead of the veg we have used below. The recipe below makes about 6 kebabs so increase the ingredients if you are making more.
Ingredients
2 x Turkey breast cut into 2cm chunks
1 x large courgette cut into 1cm chunks
1 x yellow pepper cut into slices
10 x cherry tomatoes
Method
1. Onto each skewer place a selection of turkey and veg
2. Sprinkle with some dried thyme
3. Roast in the oven at 180degrees until the turkey is cooked
