Healthy Lamb Stew Recipe

Serves 4

Now the Autumn is drawing in, this healthy lamb stew recipe is great when you want to get cosy on those dark, damp nights. As with many of our recipes we have chosen a recipe which you can make in bulk so you can use for you lunch or evening meal the next day.

Ingredients

  • 1tbsp oil
  • 500g cubed stewing lamb
  • 1 onion
  • 2 carrots
  • 2 leeks
  • 400ml hot veg stock
  • 1tbsp dried rosemary
  • 400g cannellini beans
  1. Using a large casserole dish add the oil and heat gently. Tip in the lamb and cook for 5 mins until any liquid has disappeared, then add the onion, carrots and leeks. Cook for 5 mins more, stirring often, until the veg is starting to soften.
  2. Add the stock and the rosemary, cover with a lid and cook over a low heat for 1 hr.
  3. Stir in the beans and cook for 30 mins more, topping up with water if necessary, until the lamb is tender and cooked through. Serve with some seasonal greens
