If you are looking for a tasty, healthy and quick meal then this chicken stir fry recipe is a fantastic recipe for you. Swap the chicken for prawns or steak to give you variety or remove the chicken for a healthy vegetarian option, if you’re a vegi and want to add some protein then add more cashew nuts or some egg.

- Ingredients
Handful cashew nuts
1 tbsp coconut oil
2 skinless chicken breasts, cut into small pieces
3 sliced spring onions
175g broccoli florets
175g sugar snap peas or mange tout
half a small head Chinese leaves, shredded
2 tbsp hoisin sauce
- Using a wok or a large frying pan toast the chashew nuts ad then set aside. Add half a tbsp of the oil to the pan and cook the chicken until it is evenly browned and then remove from the pad.
- Add the rest of the oil with the broccoli and spring onions and stir fry for 2-3 minutes, then add the peas and Chinese leaves and stir for an additional minute.
- Add the chicken to the pan with the hoisin sauce and 6 tbsp of water. Bring to the boil and then cover and cook for 5 minutes until the chicken is cooked through. Add the nuts and serve.
