If you are looking for a tasty, healthy and quick meal then this chicken stir fry recipe is a fantastic recipe for you.  Swap the chicken for prawns or steak to give you variety or remove the chicken for a healthy vegetarian option, if you’re a vegi and want to add some  protein then add more cashew nuts or some egg.

  • Ingredients
    Handful cashew nuts
    1 tbsp coconut oil
    2 skinless chicken breasts, cut into small pieces
    3 sliced spring onions
    175g broccoli florets
    175g sugar snap peas or mange tout
    half a small head Chinese leaves, shredded
    2 tbsp hoisin sauce
  1. Using a wok or a large frying pan toast the chashew nuts ad then set aside. Add half a tbsp of the oil to the pan and cook the chicken until it is evenly browned and then remove from the pad.
  2. Add the rest of the oil with the broccoli and spring onions and stir fry for 2-3 minutes, then add the peas and Chinese leaves and stir for an additional minute.
  3. Add the chicken to the pan with the hoisin sauce and 6 tbsp of water. Bring to the boil and then cover and cook for 5 minutes until the chicken is cooked through. Add the nuts and serve.
