Chickpea and Sweet Potato Curry Recipe
Serves 4

Ingredients
1 cup cooked chickpeas
1 sweet potato, chopped
1 cup low fat soya milk
1 cup fat free-chicken broth or vegetable broth
1 tbsp garlic, finely chopped or crushed
1 small onion, chopped
1 tbsp curry powder
1 tsp cinnamon
1 tsp salt
2 tsp olive oil
Method:
- Heat oil over medium heat.
- Cook onion and garlic until soft, about 5 minutes.
- Add curry powder and cinnamon. Stir to coat onions.
- Stir in chopped sweet potato.
- Add soy milk and chicken broth.
- Bring to boil and reduce to simmer. Simmer about 30 minutes until thickened.
- Add chickpeas and cook until warmed through.
