Here are some quick chicken recipes, they take around 15 minutes to cook so no excuses for not eating healthy! Get cooking and enjoy!
Cacciatore chicken
Kcal 171, Protien 32g, Carbs 6g, Fat 2g, Sat 1g
Serves 4
Ingredients
- 1 onion, sliced
- 2 garlic cloves, sliced
- 1 tsp olive oil
- 400g can chopped tomatoes
- 2 tbsp chopped rosemary leaves
- 4 chicken breasts
- small handful basil leaves
- favourite seasonal vegetables, to serve
Method
- Fry the onion and garlic in the oil until softened. Add the tomatoes, rosemary and seasoning, and cook for 10-15 mins until thickened.
- Heat oven to 180C/160C fan/gas 4. Put the chicken on a baking tray, top with the sauce and bake for 15-20 mins until cooked through. Serve scattered with basil, with your favourite veg, if you like.

Chicken Tray Bake
Ingredients
- 4 chicken breasts
- 1 tbsp olive oil
- 250g cherry tomatoes
- 4 tbsp pesto
Method
- Put the chicken breasts in a large, shallow roasting tray and drizzle with olive oil. Grill for 10 mins, then add cherry tomatoes and grill for another 5 mins until chicken is cooked. Drizzle pesto over the top and serve.
Chicken with harissa & tomatoe
Kcal 184, Protien 34g, Carbs 2g, Fat 4g, Sat 1g
Serves 4
Ingredients
- 4 skinless chicken breasts
- 2 tsp harissa (Belazu’s rose harissa is really full-flavoured)
- 1 tsp olive oil
- 1 tsp dried oregano
- 250g pack cherry tomatoes
- handful olives
Method
- Heat oven to 200C/fan 180C/gas 6. Put the chicken into a medium roasting tray, then rub with the harissa, oil and oregano.
- Cover with foil and roast for 5 mins, then remove the foil and add the cherry tomatoes and olives to the tray. Roast for 10 mins more until the tomato skins start to split and the chicken is cooked through. Serve with veg
