Baked Eggs!

So yesterday on facebook I posted an updated asking whether it was sad that I was excited about having baked eggs for tea!
This got a few responses, some people saying yes and others asking what baked eggs were. I’m not even sure baked eggs is the right name for what I made last night but what the hell, here is the recipe….dead easy to make, really filling and absolutely scrumptious!
1. Pre-heat oven to 200oC
2. Place a roughly chopped red onion, 1/2 chopped courgette, 1/2 chopped small aubergine, 1/2 chopped pepper and a handful of chopped mushrooms in a ceramic roasting dish and roast for about 10 minutes using a small amount of olive oil.
3. Add a tin of chopped tomatoes, 1 clove crushed garlic a splash of balsamic vinegar, a splash of red wine vinegar and mixed herbs and bake until the veg are soft but still a little crunchy.
4. Make two wells in the mixture and crack two eggs into these wells.
5. Bake until the eggs are cooked.
6. Voila……baked eggs….enjoy!
