Let’s face it, many of us don’t have a lot of time so often we need to be able to make our meals as quickly as possible! A quick fix meal does not have to be unhealthy, so here is my ‘everything in a dish’ recipe. It basically consists of any veg in my fridge the needs eating up!
In this weeks everything in a dish I had
- Peppers
- Onion
- Courgette
- Celery
- Mushrooms
- Spinach
- Tomatoes
Then simply pour in a couple of tins of tomatoes (remember to get a brand low in salt and sugar). This time I actually had a load of fresh tomatoes so popped then in a blender added some garlic, mixed herbs and black pepper and gave it a good blitz!
Pour the tomatoes over the veggies and give them a good stir! By the way I’m aware my attempt at this looks horrendous I had too much tomato. Bake in the oven for 20 mins or so until all the veggies are cooked and its warmed right through.
I actually had mine with roasted chicken thighs I seasoned with garlic, pepper and mixed spice with a slight glaze of organic family produced honey.
I’m afraid i didn’t take any after pics…. I ate it too fast NOM NOM
Remember for this everything in a dish recipe you can use any veggies and any meat or fish and make extra for your lunch!
