Szechuan Chicken Recipe

Serves 4

331 calories, 56 from fat

Excellent high protein low fat meal, great for heavy helping recover from a workout. 

Ingredients

4 Chicken Breasts, boneless and skinless, cut into cubes

3 tbsp corn flour

4 garlic cloves

5 tbsp soy sauce

1 ½ tbsp white wine vinegar

1/4 cup water

1 tsp sugar

3 spring onions, sliced and cut into ½ inch diagonals

¼ tsp cayenne pepper

 Method:

  1. Place the chicken and cornflour into a bowl, and toss to coat. Heat a wok over a medium-high heat. Fry the chicken pieces and garlic, stirring constantly until lightly browned. Stir in the soy sauce, vinegar, sugar and water.
  2. Stir in the green onions, and cayenne pepper, cook uncovered for about 2 more minutes. Serve over wholegrain rice.
