I think it may be time to ditch the shorts, it is officially cold! Just got inside from the lunch time class and my hands are like ice cubes – it has taken me 20 minutes to type this first sentence out!
When it comes to weather like this there is only one type of food I want and that is warming comfort food and this spicy lamb stew does the trick. For me you cant beat a ‘one pot’ dish that works just as well for an individual like myself as it does for the whole family and when it comes to one pot dishes – you can’t beat a stew!!
Another great thing about stews is that you can decide what goes in it! There are very little rules, for me the key ingredients are meat (or meat substitute) and potato (any), when it comes to the veg just add whatever you have in on that day, that’s what I did. I also did followed this basic recipe…
Ingredients
- Boneless lamb (can be any meat/substitute – beef is also good!)
- Olive oil
- Sweet potatoes 500g
- Piri piri sauce 2 tbsp (or to taste)
- Courgettes 500g
- 1 Pepper
- Chick peas (1 can drained)
- Parsley
- For marinade – onion, sherry vinegar, paprika, garlic, coriander and seasoning.
Method
- To make the marinade, combine all the ingredient in a bowl and mix up until thoroughly combined. Add the lamb, mix again and then cover and leave for at least an hour or ideally overnight…it will be worth it.
- Preheat oven to 190
- Start to brown off the meat in a frying pan, sprinkle with flour and stir. Leave to cook for 5 minutes and then stir in 250ml of water, after this add the potatoes, veg and Piri Piri sauce and mix well. Transfer into a baking dish, cover and then bake for 50 minutes.
- Stir and add the chickpeas before cooking for a further 30 minutes.
- DONE!
- Place in the centre of the table and dig in, it will certainly warm you up!!
