It’s Winter and that can only mean one thing………slow cooker season! Aren’t slow cookers great, you just chuck everything in there, turn it on and leave it…..the perfect recipe for a some healthy, winter comfort food. Here is the perfect winter warmer for you….a tasty chicken casserole recipe for you to try. I like to make it with Italian herbs, but you could take out the olives and add Indian spices for a different twist.
This recipe serves 4 people so is a great family recipe, or you can portion up for your lunches and evening meals when life is busy!
Ingredients
1 brown onion, finely chopped
8 x chicken thighs
2 x teaspoons olive oil
2 x garlic cloves, crushed
1 x yellow pepper, sliced
2 x handfuls black olives
400g tin of chopped tomatoes
250g fresh cherry tomatoes (you can use x2 tins of chopped tomatoes instead but I find adding fresh tomatoes gives the sauce a really nice flavour.
1 x vegetable or chicken stock cube
200g mushrooms, sliced
1-2tsp Italian mixed herbs
Method
It couldn’t be more simple, chuck everything in the slow cooker, place on a low setting and leave to this chicken casserole recipe to cook for around 6-8 hours. Delicious!
