With the grey skies of Winter setting in if you are anything like me you will want to bring some colour back into your life. This dish of mediterranean baked salmon is perfect for achieving this but is also a taste sensation packed full of flavour and great nutrients to support your health and fitness goals. It is perfect for an easily prepared lunch or a great light evening meal that you can set cooking whilst you get out of your work clothes and will be ready in no time. Because this meal is so easily prepared why not double up and pack one away for your lunch in the week?

Mediterranean Baked Salmon

The ingredients you will need for this dish to serve 2 people are as follows:

2 x Salmon Fillets

Lemon Juice

Fresh Dill

10  x Cherry Tomatoes

1 x Red Onion

1 x White Onion

2 x handfuls of Mange Tout

Method:

1. Warm the oven to 200-220 degrees.

2. Prepare the salmon with a squeeze on lemon juice drizzled over each fillet, and add a few sprigs of dill.

3. Briefly dry saute your onions to soften them slightly

4. Place the sauteed onions into a non-stick tray along with the mange tout, and cherry tomatoes (peppers and courgettes are a great addition/alternative to this too) and drizzle with extra virgin or olive oil.

5. Place the prepared salmon over the top of the layered mixed vegetables and add more dill to according to preference.

6. Place the tray in the middle of the oven and leave for 20-30 minutes checking every so often. Times will vary on ovens and size of the salmon.

7. Dish up and enjoy!!! Or alternatively leave to cool, box it up, and enjoy the next day for lunch!!!
